Easy Instant Pot Cilantro Lime Rice
Cilantro Lime Rice is the easiest thing you will ever make. If you are craving those Chipotle flavors but don’t want to pay Chipotle prices this is the recipe for you. Personally, I enjoy cilantro lime rice with hot sauce and an exaggerated amount of lime juice. So much so my family tends to ask me if I would like some rice with my lime juice. In addition to just eating the rice by itself I love to combine it with vegan enchiladas, tacos, and inside a burrito for lunch. The ingredients are easy and readily available in most supermarkets. I prefer Jasmine rice for this rendition I find it has a more fluffier texture and makes for a great rice or rice pudding. Don’t have Jasmine rice, simply replace it with any rice your family enjoys even brown rice works but the cooking time will be a little longer. Now this recipe calls for an Instant pot but it can be adapted to a stove top so do not get discouraged. I prefer freshly squeezed lime juice and if you are so inclined to also use the zest. This recipe is oil free but I have also made it with one teaspoon of coconut oil and oh man was it absolutely delicious. Finally, for the broth I used water to keep the cost low but if you keep vegetable broth in your pantry feel free to use it and it will amp up the flavor even more. Easy Instant Pot Cilantro Lime Rice
Equipment
- 1 Instant Pot
- 1 Kitchen Spoon
- 1 Fork for fluffing
Ingredients
- 1 Cup Rice
- 1 1/2 Cup Water
- 1/2 Cup Cilantro Roughly Chopped
- 1-2 Tablespoons Lime Juice
- 1 Teaspoon Himalayan Salt optional
- 1 Teaspoon Coconut Oil or Neutral Cooking Oil optional
Instructions
- If using oil set your Instant Pot on saute and add the oil.
- Then add the rice
- Stir the rice around so that it is all coated with the oil
- Add the water or broth followed by the salt and turn off the Instant Pot. Proceed to put your Instant Pot on the pressure cook setting for 7 minutes.
- Once the Instant Pot finishes cooking the rice leave it alone so that it releases the pressure on its own. This will also make the rice a little more fluffier. If you are in a rush simply SAFELY release the pressure away from your face. Add the cilantro and lime juice.
- Fluff with a fork.
- Enjoy with those you love.
