Hearts of Palm One Pot Pasta Casserole
What is better than a casserole to begin the week? Since going vegan I realized that sometimes we miss the flavors we grew up loving. Such as the taste of seafood that I tried to mimic here , beef like in my Vegan Barbacoa , or chicken. So in my never ending journey of making delicious vegan food I decided to experiment with hearts of palm for this recipe.
What pasta can I use for this fishless casserole?
Since this is a one pan recipe you will not have to worry about precooking your pasta. For this recipe I used a brown rice pasta but you can use any vegan brand you prefer. Remember the pasta will cook in the oven. So we will need a flavorful and creamy broth. Which is why we will be using some Old Bay powder and a little vegan mayonnaise. Don’t forget to scroll down to NOTES for tips on using pasta that has already been cooked. Let’s begin shall we!
Hearts of Palm One Pan Casserole
Equipment
- Oven
- Baking Dish 9×9
- Spatula or Kitchen Spoon
- Whisk
- Knife
- Mixing bowl (optional)
Ingredients
- 2 Cups Fusilli Pasta or pasta of choice
- 1/2 Cup Vegan Mayo
- 1 7 oz. Can Hearts Of Palm
- 2 Tablespoons Old Bay Seasoning
- 1/4 Cup Minced Red Onion
- 1 Cup Green Beans or veggie of choice
- 2 1/2 Cups Water or Vegetable Broth
- Salt and Pepper to taste
- Butter for greasing baking dish optional
Optional Garnishes
- 4 Slices Vegan Cheese
- 1/2 Cup Bread Crumbs
- 1 Teaspoon Red Pepper Flakes
- 1 Tablespoon Cilantro or Scallions
Instructions
Pre-Heat Oven at 375F -Scroll down to NOTES if using pre-cooked pasta!
- Prepare your vegetables. I used raw green beans but you can use your greens of choice such as broccoli or peas. Fresh or frozen doesn't matter we all need a little help from the grocery store sometimes.
- Mash the hearts of palm, I used a food processor but you can use a potato masher or mince with a knife as well.
- If you are using a mixing bowl add the 3 cups of broth and the 2 Tablespoons of Old Bay seasoning along with the 1/2 cup of Mayonnaise and whisk until all of the ingredients have dissolved and integrated together. If you are not using the mixing bowl add all of your ingredients to the casserole dish and mix until everything is evenly incorporated.
- Mix all of your ingredients together.
- Optionally grease your baking dish.
- Add your mix of veggies and pasta to the baking dish.
- This step is optional but recommended, add 4 slices of vegan cheese.
- Add 1/2 cup of bread crumbs on top of the cheese and distribute evenly across your casserole.
- Place in the oven at 375F for 45 minutes then broil for 4-6 minutes on 450F
- Garnish with herbs a some red pepper flakes or serve as is.
