Maple Roasted Brussel Sprouts and Apple Salad
Brussel Sprouts the new born baby to cabbage. Packed with nutrients and mean flavor. In this recipe they are combined with sweet and sour notes from the maple syrup and lemon juice. But if you do not have maple syrup this recipe works well with date syrup or your choice of vegan honey.

The ingredients are as wholesome and minimal as they can get. In addition to the maple syrup you will need dijon mustard, apples, some good quality extra virgin olive oil and lime or lemon juice. The toppings you choose are totally optional some vegan cheese would go wonderfully here. Or even some vegan bacon bits. Lets begin shall we!
Maple Roasted Brussel Sprouts and Apple Salad
Equipment
- Oven
- Baking Tray
- Knife
Ingredients
- 32 Ounces Brussel Sprouts
- 1 Large Apples
- 2 Tablespoon Maple Syrup
- 1/4 Cup Extra Virgin Olive Oil
- 1 Tablespoon Dijon Mustard
- 2 Tabespoons Lime or Lemon Juice
- Salt and Pepper to taste
- Fresh Parsley to garnish totally optional
Instructions
- Turn on the oven to 400F then squeeze 2 tablespoons of lemon or lime juice proceed to thinly slice the apple. Coat the apple slices with lemon juice and place in the refrigerator.
- In a baking dish coat the brussel sprouts with 1 tablespoon of olive oil. Bake at 400F for 30 minutes flipping half way at the 15 minute mark.
- Make the dressing by mixing the remaining olive oil, mustard, salt, pepper and maple syrup or sweetner of choice.
- Once the the brussel sprouts are roasted add them to the apples and coat well with the dressing.
- Serve as desired.
