Mexican Vegan Strawberries and Cream
This recipe is the easiest you will probably find on my site. I love the simplicity of the entire recipe. You can buy all of the ingredients and just throw them all together in minutes. Fresas con Crema or Vegan Strawberries and Cream is a street snack very well known in Mexico.
This recipes packs the perfect sweetness for a summer snack or an evening dessert. I opted to use full fat coconut cream but you can easily use some vegan sour cream if you desire. Personally I love coconut so that is why I use it frequently in my recipes. If you have access to a HEB Supermarket I highly recommend you look for their condensed soy milk and evaporated soy milk. I routinely use these milks in many desserts such as the Coconut Rice Pudding on my website. I also use these milks in the Mexican Carlota dessert that you can also find on this website. Lets begin shall we!
Mexican Vegan Strawberries and Cream
Equipment
- Blender
- Large Mixing Bowl
- Knife
- Spatula
Ingredients
- 1 11.2 ounces HEB Sweetened Condensed Soy Milk
- 1 11.2 ounces HEB Evaporated Soy Milk
- 1 13.5 ounces Chilled Fat Coconut Milk
- 2 Pounds Fresh Strawberries reserve some for garnish if desired
- 2 drops Red Food Coloring optional
- Coconut Whip Cream optional
Instructions
- Prepare you cans of milks.
- When you open the coconut milk you may find the milk is thick, spoon it out carefully and put in the blender be sure to reserve the remaining liquid in the can for smoothies.
- Chop the strawberries in small pieces or large if you desire.
- Add the condensed milk and evaporated milk along with the coconut cream to a blender with 2 drops of vegan red food coloring and blend.
- In a large mixing bowl at the pink mixture of milk from the blender, the strawberries and mix to combine gently with a spoon or spatula.
- Enjoy with the people you love.

Strawberries are my all-time favorite so I know I’m gonna love this!! And whipped cream is never optional for me, it’s mandatory…LOL. My son is going to love this too so I gotta stock up on more strawberries!
