Organic, Vegan and GMO Free Maca Popsicle

Ingredients needed for this popsicle?
For this popsicle you will need “The Morning Motivator” from THE MACA TEAM. Now you may be wondering why I used “The Morning Motivator”, for a popsicle. Well that is because although the package says morning how many times have you found yourself a little sleepy or exhausted around 2 o’clock in the afternoon? So how great would it be to have a popsicle that is not only refreshing but is made with clean ingredients such as Maca, Cacao, Coconut Sugar, Mezquite and Lucuma. Not only can you make popsicles, but “The Morning Motivator” can also be enjoyed cold or in hot beverages. And I am gonna let you in on a secret I even used it in my morning protein shake that I drink as a meal replacement. Some other ingredients that you will need but are totally optional are Organic Soy Milk or plant milk of choice, Organic Coconut Oil and Organic Corn Starch or a replacement to achieve extra creaminess during the freezing process. Let’s begin shall we!
Organic, Vegan and GMO Free, Maca Popsicles
Equipment
- Soup Pot
- Whisk
- Freezer
- Popsicle Molds with Sticks
Ingredients
- 4.5 Tablespoons The Morning Motivator
- 1 Teaspoon Organic Coconut Oil optional
- 4 Cups Organic Soy Milk
- 2 Tablespoons Organic Corn Starch optional
- 2 Tablespoons Organic Coconut Sugar optional
- 1 Tablespoon Water to make corn starch slurry
Optional Ingredients You Can Mix In When Freezing
- Pecans
- Dairy Free Chocolate Chips
- Walnuts
Instructions
- Add 4 cups of soy milk to your pot and simmer on medium to high heat.
- Add 4.5 Tablespoons of The Morning Motivator and whisk vigorously so that no clumps form. This will take about 4 minutes.
- Once your mixture is simmering and slightly bubbly add the teaspoon of coconut oil and continue whisking for 4 more minutes.
- Make the corn starch slurry by mixing the 2 tablespoons of corn starch with 1 tablespoon of cold water in a small bowl. Once the mixture is combined and there are no clumps, mix it in slowly to your milk mixture and continue whisking for 5 more minutes.
- Remove the milk mixture from the heat and cool to room temperature.
- You will notice the mixture reduce to about 3 1/2 cups that is normal add the cool mixture to your popsicle molds and freeze for atleast 5 hours.
I am loving this recipe. I usually only see maca in smoothie recipes. Great idea on making popsicles!
