Raisin and Pecan Cheeseball
Nothing says snack time more then some type of cheeseball. This Raisin and Pecan Cheeseball is perfect for any special occasion or a movie night. What I love most about cheeseballs is that they can be made with any toppings you prefer. I used pecans and raisins here with some roasted red bell peppers. But you can use walnuts instead of pecans or cranberries instead of raisins. The sky is really the limit.
Is there dairy in this cheeseball?
This cheeseball is dairy free and gluten free. What you choose to dip is your choice. I used Mary’s Gone Crackers because she can do no wrong when it comes to crackers. But I have also tried gluten free toast, fresh carrots, celery and bell peppers. What was most delicious was when I tried a little smear of this cheeseball in between two cucumber coins. It was like a little sandwich made in heaven. Let’s begin shall we!
Raisin and Pecan Cheeseball
Equipment
- Blender or Food Processor
- Spoon or Spatula
- Plastic Wrap or Parchment Paper
Ingredients
- 2 Tablespoons Nutritional Yeast optional
- 1 Tablespoons Lime or Lemon Juice
- 2 Tablespoons Coconut Oil melted
- 1 Block Extra Firm Tofu 14 ounces
- 1 Tablespoons Minced Garlic
- 1 Tablespoons Minced Onion
- 1/2 Cup Chopped Pecans
- 1/2 Cup Chopped Roasted Red Peppers
- 1/2 Cup Raisins
Instructions
- Press your tofu wrapping it in clean kitchen towels and placing between 2 heavy objects to get as much water out of it as possible.
- Mince your onions and juice your lime.
- Have your minced garlic and onion handy for easy access. Melt your 2 tablespoons of coconut oil using an oven or stove top or microwave if you prefer.
- Blend all of your ingredients together in the blender or food processor except the raisins, pecans and peppers.
- Get your delicious toppings ready
- If you don't want to dirty your hands use plastic wrap. Get ready to place the raisins, pecans and roasted red peppers inside the tofu mix as well as around. How much or how little is totally up to you. Make the round shape using your hands as if playing with dough.
- Add your pecans.
- Add raisins and peppers.
- Wrap up the cheeseball and place in the refrigerator for at least an hour or overnight if you make this a day in advance.
- Serve your cheeseball on a pretty platter and enjoy
