  • Pressure Cooker optional
  • Stove

Ingredients
  

  • 1 Cup Dried Lentils
  • 1 Tbsp Olive Oil Optional alternatively you can use vegetable broth to saute onions and garlic.
  • 2 Cloves Garlic
  • 1/2 Onion Small Size
  • 1 Whole Carrot Large
  • 1/2 Can Diced Tomatoes 7 Ounces
  • 1/2 Tsp Italian Herbs
  • 5 Cups Water I used water but you can use vegetable broth if you prefer.
  • 1 Cube Unchicken Bouillon Optional
  • 1 Tsp Salt Optional add to your personal preference.

Instructions
 

  • Add olive oil or vegetable broth to your instant pot on the saute setting. Saute the onion, garlic and bouillon cube for 3 to 4 minutes then add the 5 cups of water to release the flavors sticking to the bottom of the pot. Proceed to add lentils, carrots and diced tomatoes then stir to combine all ingredients. After this step set your pressure cooker on manual for 6 minutes. If using your stove bring all ingredients to a medium simmer and boil for 25 to 30 minutes until the lentils reach your desired consistency.

  • Just made it. Now cooking in Instant Pot. Very easy and I have high hopes! I have a few questions: 1. Is the instant pot set to high pressure or low? 2. I assume the recipe calls for diced carrots because that’s what’s pictured, although it just calls for 1 large carrot. 3. When to add Italian spices? I added with the carrot, tomatoes & lentils because that was the order and what the photo showed but the recipe instructions don’t indicate.

      Hi Jen my deepest apologies for not responding sooner. I used the manual setting of my IP I have a older version that doesn’t specify high or low but I’m assuming it’s high. The seasonings should be added when sautéing to bloom them and add more flavor.
