What makes a good Vegan Taco de Bistec

In this rendition I used Butler Soy Curls. But you can use your preferred meat substitute as long as you season it well. Remember meat is usually seasoned with plants so it’s a win-win with vegan meat substitutes. Some of the meat alternatives I have used in the past have been cauliflower rice, baby bella mushrooms and texturized vegetable protein. To achieve the meat flavor you will be using lots of spices and herbs like, salt, onion powder, garlic powder, paprika, marjoram, nutritional yeast and coconut aminos that can be substituted with soy sauce or tamari. You will need a great salsa for these tacos because what is a taco without a salsa. Let’s begin shall we!

Equipment

  • Large Bowl
  • Stove
  • Large Spatula
  • Griddle or Frying Pan
  • Cutting Board
  • Knife

Ingredients

  • 3 Cups Water
  • 1 Cup Nutritional Yeast optional
  • 6 Tablespoons Coconut Aminos or alternate
  • 2 Tablespoons Onion Powder
  • 2 Teaspoons Garlic Powder
  • 1/4 Teaspoon Dried Marjoram
  • 1 Tablespoon Paprika
  • 1-2 Packages Mini Street Taco Corn Tortillas flour is okay too
  • 1 Bag Butler Soy Curls 8 ounce Bag
  • 8 Teaspoons Neutral Oil optional

Toppings

  • 2 Large 1 will be Minced the other cut in rounds
  • 1 Bunch Minced Cilantro
  • 10 Whole Limes cut in halves

Instructions

  • In a large bowl add the water, nutritional yeast, coconut aminos, onion powder, garlic powder, marjoram and paprika and whisk together. After combining all of the ingredients well add an entire bag of Butler Soy Curls and let them marinate for atleast 30 minutes. The longer the better. I have even done 3 days and the tacos are to die for.
  • Once the curls have marinated atleast 30 minutes press the excess liquid out of the curls and mince them. If you cook without oil then you may want to press less of the liquid out so you can use it to cook with.
  • Your stove should be at a medium to high flame so that the griddle can do its magic. Add the marinated curls to the pan with minimal oil if you don't mind using it. If you are cooking with oil then add 1 teaspoon at a time if you feel it needs it. Begin pressing the curls so that the liquid sweats out. Move the curls around periodically so they do not burn. This pan frying will take about 10 to 15 minutes for the entire bag of curls.
  • Mince onion and cilantro finely for topping the tacos.
  • Move the soy curls to the side of the griddle pan or frying pan and lower the flame to medium low. Saute the rings of what onions for topping lightly around 2-3 minutes adding oil if desired.
  • Once the rings of onion are sauteed begin heating up the corn tortillas with minimal oil if desired.
  • Assemble the tacos by placing 2 tortillas together then adding the soy curls followed by the minced white onion, minced cilantro along with the sauteed onion rings. Squeeze some lime and top with a nice hot sauce like the ones on this website.
