The Best Vegan Chocolate Chip Cookies

This chocolate chip cookies is easy, delicious, gluten free, oil free and uses minimal ingredients. You can dip it, dunk it or chunk it in your morning coffee, your evening frothy tea or plant based milk. A treat that surely your family will enjoy.
The Best Vegan Chocolate Chip Cookies
Before we start be sure to have a bowl and a plate plate or cutting board. This recipe is not a difficult one but since we will be working with oat flour you may experience the flour sticking to your hands so start off by separating a 1/4 of a cup of flour on the side so you can rub your hands with it and avoid the sticking.

Ingredients
- 1/2 Cup Oat Flour You can make your own out of oats in your food processor.
- 1 Medium Spotty Banana The older the banana the sweeter the cookies.
- 1/8 Teaspoon Baking Powder
- 1/8 Teaspoon Baking Soda
- 2 Tablespoons Natural Peanut Butter
- 3 Tablespoons Chocolate Chips Dairy Free
- 1 Dash Salt Optional
Instructions
- Start with mashing your spotty banana, I was too anxious to wait for mine to brown because I couldn't wait for you to try this cookie but the browner the better. After mashing your banana you will incorporate the 2 tablespoons of peanut butter. Since this is a easy and chill recipe you will only use one mixing bowl (yaay for no dirty dishes). After your 2 wet ingredients are combined and making sweet magical memories together you will incorporate all of the dry ingredients.
- Mix the batter until everything is well incorporated and uniform. After everything is mixed well gently fold in the mini chocolate chips. You can use any size of chocolate chips I used bittersweet ones here but if you want a sweeter cookie use sweet chocolate chips or chunks. After all your ingredients are mixed well place the batter in the freezer for 10 minutes.
- Turn on your oven at 350 Degrees Fahrenheit
- After 10 minutes pull the batter out of the freezer and see if it is sticking to your hands. If so you will need to rub a tiny bit of gluten free all purpose flour if you are gluten free or regular flour. Begin to form a large circle with your hands or if you have a rolling pin you can use that too. I used my hands to be so I can feel the consistency of the dough. Begin to make your cookies with a cookie cutter or your hands by forming a medium size ball of dough and pressing gently onto your parchment lined tray. I made 6 cookies that were about an inch thick. The thinner you make your cookies the more you will be able to make but this is totally up to you.
- After you have elaborated all of your cookies, place them on the parchment paper lined tray and begin to bake for 15 minutes.
Notes
When your cookies are ready you will have to let them cool, (boo for cooling) because this will be so hard. But not to worry if you have to go as far as putting them in front of a fan more power to you. Hint, hint I did this.
Serve your cookies with a side of ice cold plant milk or a warm and delicious coffee or tea. The possibilities are truly endless.
