The Easiest Two Ingredient Almond Milk
Todays recipe is a short one guys. So I decided to make Almond Milk because I drink so much of it and let me tell you it is well worth the effort. Plus I do not own a Vitamix Blender or any other fancy blender so I wanted to see if my Ninja was up for the job and let me tell you it did not disappoint. What do I need to make this plant based milk?
The ingredients are really just raw almonds and purified or filtered water. Now this is not to say you can’t add some almond extract or vanilla extract for a little extra flavor but that is up to you. I saw several people adding some type of sweetner like pure cane sugar, stevia drops, monk fruit sugar and even soaked dates. But I like to keep the calorie count low on milks so I omitted it. Now you will also need either a nut milk bag or a fine mesh strainer. I used the strainer and it worked fabulously. We are making thirty-two ounces of milk, I prefer smaller batches, this milk will be good for seven to ten days when refrigerated.
Can I bake with almond milk?
I did test this milk in baking and found that the ratio of three cups of water to one cup of raw almonds worked better then the ratio four cups of water to one cup of raw almonds as my recipe calls for. Obviously the less water you use the better concentrated it is but I would not go under three cups water for sure. Let’s begin shall we!
The Easiest Two Ingredient Almond Milk
Equipment
- Refrigerator
- Strong Blender
- Fine Mesh Strain or Nut Milk Bag
- Spatula
- Funnel
- Large Mixing Bowl (optional)
- Mason Jar or any Jar with a lid
Ingredients
- 1 Cup Raw Almonds
- 4 Cups Filtered or Purified Water
Instructions
- Soak the Raw Almonds in a large mixing bowl overnight. Make sure to place the bowl inside the refrigerator and do not forget to put an air tight lid on it to keep foreign odors away.
- After atleast 8 hours of soaking remove the skins of the almonds discard or place in compost.
- Make sure to thoroughly rinse your almonds once the skins have been removed.
- In your blender add the 4 cups of water and the almonds and blend for atleast 1 minute until you see that there is no lumps. Proceed to put the almond milk through a fine mesh strainer or a nut milk bag to remove all of the almond pulp.
- Make sure the pulp does not go thru the mesh or nut milk bag. I usually make crumbled cheese with the left over pulp by adding nutritional yeast, lemon juice and salt and adding them to quesadillas or enchiladas, but you can make other baked goods if you prefer.
