The Sweetest Vegan Almond Cookies
If you have an overstock of all purpose flour and raw almonds then this is your post. And if we are being honest who doesn’t love a good crunchy cookie after an evening meal. Or hey if you want to have these for breakfast no judgement here. From sweet to crunchy to indulging these Sweetest Vegan Almond Cookies are a sure crowd pleaser.
What ingredients will you need to make these almond cookies.
To start off you will need all purpose flour. agave, light brown sugar and coconut sugar for those sweet notes. For an extra almond flavor I also add almond extract and some salt to bring out all the hidden flavors of a cookie. Because this is an indulging recipe I have also used vegan butter. To help the cookies brown beautifully and for some crunch I added baking soda and of course chopped raw almonds. If you wanted to and are feeling fancy feel free to add some chocolate chip as well. The Sweetest Vegan Almond Cookies
Equipment
- Large Mixing Bowl
- Cookie Sheet
- Spatula
- Hand Mixer
- Parchment Paper
- Fridge
- Oven
Ingredients
- 3 1/4 Cup All Purpose Unbleached Flour
- 1 Teaspoon Baking Soda
- 1 Cup Chopped Raw Almonds
- 1/8 Teaspoon Almond Extract or 1 Teaspoon Vanilla Extract
- 2 Cups Vegan Butter room temperature
- 1 Cup Light Brown Sugar
- 1/4 Cup Coconut Sugar
- 2 Tablespoons Flaxmeal flax eggs
- 6 Tablespoons Warm Water for Flaxeggs
- 1 Tablespoon Agave Syrup
- 1/8 Teaspoon Salt any will work
Instructions
- Turn on your oven at 350F. Make the flax eggs by combining 2 tablespoons of flaxmeal with 6 tablespoons of warm water mix to combine and let sit for about 5 minutes. Chop the raw almonds.
- In a large mixing bowl add the room temperature vegan butter, sugars, salt, agave, almond or vanilla extract and whisk to combine with a hand mixer. Add the flax eggs and the chopped almonds. Lastly add the flour and mix to combine.
- Line a baking sheet with parchment paper and add cookie dough balls the size of a quarter. Place the cookies in the oven to bake at 350F for 10-15 minutes depending on your oven. Cookies tend to expand so be careful not to place them too close to eachother.
- Enjoy them with those you love the most.
