Vegan Enchiladas Monterrey, Mexico Style
When I say “Nostalgic Meals”, this is the one that does it for me. Picture the grand city of Monterrey, Mexico also known as the Mexican New York City. You get off a cab and make your way up a mountain boasting with homes. There is street food to the right and even more tasty street food to the left. You see these Enchiladas on the side of peoples sidewalks where they have conspicously set up shop in their homes with just a a few tables and their grills. Using paper plates and a ton of oil. But don’t worry we won’t be using so much oil here. So before I go any further just know that to make these enchiladas you will need the Lazy Vegan Queso Fresco from my website to fill your enchiladas. The Mexican Street Food Experience
The vibrant orange and red color of the corn tortilla cries out for your attention so you stop and admire their beauty. You see tacos, Mexican burgers, Mexican Enchilada Hash Browns, pan fried jalapeños and white onions that have been deep fried to perfection pairing perfectly with any dish. The salsa buffet has different colored sauces, from Salsa Verde to Charred Tomatillo Sauce to a Mexican Mayonnaise that is spicy and everything but a traditional mayo. The potato and carrot hash is the perfect compliment to these enchiladas. Pan fried to perfection with just a tablespoon or two of Homemade Enchilada Sauce adding just the perfect amount to such a comforting dish.
The Monterrey, Mexico Enchilada Experience
You order the Enchiladas and can see the young home chef sweating over a hot type of wok flipping the tortillas, assembling The Mexican Bistek Tacos, layering the burgers and complimenting the dishes with sides of fries, salsas and salads. She begins rolling the red tortilla enchiladas filling them with just the perfect amount of Lazy and Vegan Queso Fresco that has been mixed with minced onion giving them just the perfect touch of freshness. The line behind you is getting long with bystanders and pedestrians that were just passing by but smelled the good food and also stopped. Who can resist!
Finally, the moment has come and you get your paper plate so you take a seat on the sidewalk because you know there will be an explosion of tangy, refreshing cheesy goodness in side the enchiladas. No shame in your game! You uncover the plate where you are just a few seconds away from enjoying one of the cities most recognized dishes. Using your left hand to hold the plate and the right hand you pick up the red cheesy goodness from the home chef that doesn’t even have a food permit but who cares we all know that the best and freshest meals are found in homes or whole in the wall restaurants that are so delicious but so underrated. Let’s begin shall we!
Vegan Enchiladas Monterrey, Mexico Style
Equipment
- Griddle
- Stove
- Spatula
Ingredients
- 1 36 count Red Corn Tortillas optional
- 14 Ounces Vegan Lazy Queso Fresco
- 1 Tablespoon Neutral Cooking OIl optional but recommended
- Enchilada Hash Browns and Garden Salad optional
Instructions
- Turn on your stove on a medium to high heat and place your griddle to begin to heat.
- With a napkin or kitchen brush, rub some oil on each red tortilla.
- If you can't find red tortillas simply dip the traditional white ones in Enchilada Sauce and this will work just great.
- Place the tortillas on the griddle pan and flip at the 1 minute mark to ensure they do not burn.
- Fill each tortilla with the Vegan and Lazy Queso Fresco and roll them like flutes.
- Make as little or as many as your heart desires. "This Vegan and Lazy Queso Fresco" lasts a week in the fridge but I warn you that you won't be able to eat just 4 or 5 these are that good.
- Enjoy with the ones you love the most.

These sound good. I know I won’t find red tortillas here but I’ll try your workaround using the ordinary white ones and dipping them into the sauce. I’ve been watching a cooking series on Mexican food so I’ll really pleased that I found this recipe that I try for myself. My family is going to love them.

You always remind me of my years of sailing to Cozumel and stuffing my face with amazing Mexican foods… How I miss that! How do I make red tortillas? Would tomatoes work?
You can mix masa with the enchilada sauce I have on this site. Follow the instructions on the Masa bag and replace the water with the Enchilada Sauce. But you can also find them in some ethnic stores at times.

I used to work in Monterrey (12 years ago though) then later I worked at US location of a company based in Monterrey! I love when you said it is the Mexican “NYC” because that’s how I would describe it too. I’m adding all these ingredients to my grocery list to make this for our next meatless Monday. Such good food memories from thinking of Monterrey.

Hi Emily the red tortillas can be found at most Mexican food stores if not just dip a white or yellow corn tortilla in enchilada sauce and pan fry it a little gives out great taste as well.
