Vegan Ground Meat

If you are looking for a meat substitution for Burritos, Tacos, Lasagna, Shephard’s Pie, Meat Loaf or anything that used animal ground meat then this recipe will become your best friend. I created this recipe because I craved that crumbled texture that comes in a lasagna and enchiladas such as the ones pictured below.

Ingredients for Vegan Ground Meat

I chose Baby Bella mushrooms and Texturized Vegetable Protein because of how easy it is to cook and flavor them. Mushrooms add that umami flavor that we crave in a hearty dish and the Texturized Vegetable Protein add substance and bulks up any meal.

I used red onion because that is what I had on hand but you can use yellow or white depending on your preferred flavor profile. So let me start by giving you some tips. You will need hot water to saute if you follow an oil free lifestyle and and a strainer to re-hydrate and strain your Texturized Vegetable Protein. No special gadgets are needed here just a good old sauteing pan. Let’s Begin!

Equipment

Ingredients
  

  • 1 1/2 Cup Chopped Baby Bella Mushrooms
  • 1/4 Cup Onion
  • 3/4 Cup Texturized Vegetable Protein
  • 1 Tablespoon Garlic Powder
  • Salt and Pepper to your preference
  • 3 Tablespoons Oil Optional

Instructions
 

  • Begin by rehydrating the TVP with equal parts water. This step should take about 5 to 10 minutes. Personally I rehydrate it in 5 minutes since it will absorb all the flavors and liquids during the sauteeing process.
  • Place the TVP in a strainer so you can remove it's excess liquid
  • If you are using oil place your pan and oil on your stove and turn on to a medium heat.
  • After 2 minutes place the Baby Bella Mushrooms in the pan and with a spatula or kitchen spoon begin to press them gently to release their liquid so you can saute them easily if you are not using oil. You will find that the mushrooms release a good amount of water don't worry this is perfectly normal. Add the TVP and onion to saute as soon as you see the mushrooms release their liquid.
  • After about 3 to 5 minutes sauteing proceed to add your salt and pepper along with garlic powder.
  • Depending on what you are making you can add your vegan marinara sauce for spaghetti or your enchilada sauce for enchiladas.
