Vegan Hominy, Lima and Great Northern Bean White Chili
If you are vegan then you know how important a chili recipe is. Essentially chili is a meal that packs a ton of protein, fresh vegetables and the holy trinity of some aromatics. Chili is that one meal that mostly everyone enjoys. Its the vegan go to when the week is coming to an end and you need to use up all that fresh produce you probably purchased the last weekend. With Fall and Winter around the corner we most likely are already planning what meal is going to keep us warm and nourished all winter long. And I don’t know about you but standing over a stove in the middle of winter is no fun. That’s why this recipe is both Instant Pot and Crock Pot friendly. Hooray for more Netflix under our cozy blankets in our pijamas.
What ingredients make a good chili?
As far as I am concerned a good chili goes a long way when you have just the perfect amount of dry seasonings, spices and freshly sauteed aromatics. For the most part most chilis are full of vegetables and beans. However, this chili is a little different. I mainly wanted to concentrate on highlighting how good Lima Beans and Great Northern Beans can be together when combined with the earthiness of hominy. Now if hominy is not your thing you can easily replace it for some creamy potatoes. But I encourage you to give it a chance. I remember when I was taste testing and getting friends of opinions on it. We mostly agreed that the flavor and broth of this chili was almost that of a pozole.
Vegan Hominy, Lima and Great Northern Bean White Chili
Equipment
- Instant Pot
- Crock Pot (optional)
- Immersion Blender or Blender (optional)
Ingredients
- 8 Ounces Great Northern Beans soaked overnight
- 8 Ounces Lima Beans soaked overnight
- 9 Ounces Hominy
- 4 Minced Garlic Cloves
- 1 Medium Minced Yellow Onion
- 5 Cups Water
- 3 Whole Not ChickN Cubes
- 3 Teaspoons Salt
- 1 Teaspoon Paprika
- 1 Medium Yellow Bell Pepper
Optional Toppings
- Red Radish Coins
- Red Bell Pepper Coins
- Purple Onions Rings
- Lemon or Lime Juice optional but totally recommended
Instructions
- Saute the onions and bell pepper on the saute setting of your Instant Pot. Add oil if you desire I used water. Saute the onions and yellow bell peppers for atleast 5 minutes or until the onion is translucent.
- Once the onions are translucent add the Not ChickN Cubes, Oregano, Paprika and Salt and continue sauteeing for 2 more minutes. At the 2 minute mark place the Minced Garlic and Sautee for 1 minute.
- Proceed to add water followed by the rest of the ingredients. Cook on the manual setting or pressure cook setting for 25 minutes.
- If you are using a crockpot simply add all of the ingredients to the pot and set to low for 8 hours. Sautee is optional here.
- If you do not have an immersion blender, wait a little for the chili to cool and blend half of the ingredients and add them back to the chili for a more creamy texture. This step is optional but recommended. Top with optional ingredients.
