Vegan, Oil-Free, and Gluten Free Red Jalapeño Restaurant Style Salsa

For this weeks recipe I made a Red Jalapeño Salsa. This salsa is the type you dip your chips in at the local Mexican restaurant except this one is actually a little spicy. You see I am spice kind of gal. I love a little kick in any of my meals. I also found that this salsa goes great with a little squeeze of lime or lemon. Talk about an explosion of flavors in your mouth.

What are Red Jalapeños anyway?

Well these beauties are first green like the ones you find at the grocery store except these have matured longer. When green jalapeños are in your grocery store that means they are fairly new and were just picked at the farm. However, when you purchase them red such as the ones featured here well that that means that they were left longer on the vine and in turn they develop more capsaicin and that my friends is what gives a pepper their hotness.

What makes a good salsa and how long can it be stored?

A good salsa has an abundance of red or green tomatoes such as this Vegan Salsa Verde. Not only does the tomato bring a nice acidity and color it also packs a ton of flavor when they are fresh off the vine. If you prefer to used canned then this will also add more life to your salsa because of the slight chemicals already in the tomatoes such as the tomatillos that I like to add at times to some of my salsas. From time to time I also make a salsa that has a mayonnaise consistency, when making this salsa I usually pan fry the jalapeños with garlic then blend them with the oil. See the recipe here. If you want to add even more flavor add garlic, onions and cilantro and I promise your guests will be impressed. When I make salsa I usually make for two to three weeks in advance so as long as you store it in an air tight container in the fridge salsas have a long shelf life. But don’t worry if you end up with more then what you needed salsas freeze well for up to three months. But let’s be real I can down salsas and chip like no ones business. Let’s begin shall we?

Equipment

  • Blender
  • Stove
  • Stock Pot

Ingredients
  

  • 6-8 Large Roma Tomatoes
  • 10-12 Red Jalapeños
  • 3 Large Garlic Cloves
  • 8-12 Cups Hot Water
  • 1/2 Large White Onion
  • 1 Handful Cilantro optional

Instructions
 

  • Thoroughly wash your ingredients.
  • Boil between 10 and 12 cups of water and place the tomato, jalapeños and garlic once the water begins to boil.
  • When the ingredients have soften after about 14 minutes add the onion.
  • Once all the ingredients have boiled for 25 minutes add the cilantro for the last 5 minutes and remove from the stove to cool.
  • Blend add 2 teaspoons of salt or to taste and enjoy
