Vegan Peanut Butter and Strawberry Energy Bites
With school now in session I have been looking to make the easiest, fastest yet nutrient dense snacks that will keep us full throughout the day. And when it comes to energy bites you just can’t go wrong. Not only are these bites full of flavor but the also have a significant amount of protein from the peanut butter. The oats give them a healthy amount of fiber while the strawberries give them color and antioxidants. The flax meal gives these bites a healthy dose of omega 3 and healthy fats that keep us satiated.
Ingredients for Energy Bites
The recipe here is simple and some ingredients can be interchanged with some that you enjoy more then others. For example if you do not like peanut butter these bites go very well with almond butter I find that while creamy nut butters work very well a crunchy one gives it even a more crunchy texture and more flavor. I used freeze dried strawberries but you can also use jam if you prefer but I do recommend that you add more oats so that your mixture is not too wet. As for the flax meal you can easily replace it with pulverized chia seeds if you do not have the flax meal. For liquid sweetner I used maple syrup, but rice syrup, date syrup or agave syrup will also work. The key here is for the mixture to be manageable to roll in balls. Lets begin shall we!
Vegan Peanut Butter and Strawberry Energy Bites
Equipment
- Large Mixing Bowl
- Food Processor (optional)
- Spatula
- Measuring Cups
- Measuring Spoons
- Tupperware with Lid
Ingredients
- 1 Cup Rolled Oats
- 1/2 Cup Flax Meal
- 1/2 Cup Creamy or Crunchy Peanut Butter
- 1/3 Cup Liquid Sweetner of Choice
- 2 Ounces Freeze Dried Strawberries
Instructions
- If you are not using a food processor measure out your ingredients in a large bowl. If you are using a processor add all of the ingredients and pulse for 30 seconds to so that your mixture still has texture.
- Mix to combine.
- Grab a 1 Tablespoon Measuring spoon and scoop out the mixture to roll into uniform bites.
- This mixture should make 16 to 17 energy bites.
- Enjoy with the ones you love.
