High Protein Strawberries and Cream Overnight Oats (Fresas con Crema)

Overnight oats made it to the scene and never left I see. I must confess (insert Britney Spears song) that I was not a big fan of them. In fact, it took me about 4 years to truly enjoy them and realize how the possibilities are really endless when it comes to overnight oats. In addition to realizing how nutritionally dense they can be when prepared right. I also thought what a genius idea they were since you could pack so much into just a little Tupperware jar or mason jar. Craving the real deal Fresas con Crema try this recipe instead.

Ingredients for Fresas con Crema Rolled Oats

A little history on the traditional fresas con crema is that this dessert can be found in Mexico as a street snack they are typically found in carts in high traffic corners. But this delicious dessert dates back to 1509 in England where history suspects that Thomas Wolsey was the first to create the dish using a combination of whipped cream and either brown or white sugar. However the overnight oats idea can be found in Swiss and German breakfast tables as a type of muesli. Isn’t it neat how now we have combined all these cultures in one delicious dish?

The traditional Mexican ingredients include cinnamon, condensed milk, vanilla extract, and Mexican liquid sour cream. This recipe makes 1 mason jar however, you can duplicate it if desired. Now a days you can find vegan condensed milk in most big box stores, in particular I use this HEB brand which is just amazing. If you are not a fan of soy simply replace with a coconut condensed milk that I typically find at Walmart in the baking aisle. Don’t have condensed milk or on a fitness journey simply omit it as this recipe only calls for 1 tablespoon anyway.

As for the Mexican sour cream I have a cashew based version that you can find here. Don’t like cashews then use just 1 tablespoon of your favorite vegan cream cheese, I tested the Tofutti brand and it was absolutely amazing. Don’t like cream cheese add one of your favorite vegan yoghurts, I used the Kite Hill brand. And if you absolutely do not want to use the cashew sour cream or cream cheese add drops of lemon or lime juice which I also tested and they turned out fabulous. For this recipe you will need rolled oats also known as old fashioned oats. I also used Manitoba Harvest Hemp Seeds for a fat source, a little salt, vanilla extract, and soy milk for added protein. Remember fat sources like hemp seeds can be replaced with chia seeds or flaxmeal, or some type of nut butter if desired. Just remember that flaxmeal and nut butters will significantly change the flavor profile of the recipe and the calorie amounts as well. It is important to know that you can easily replace the soy milk with another milk just remember that if it is already sweetened then you will need to adjust the sugar content. I would start with just 1 teaspoon of sweetener and taste as you go as condensed milks tend to have a ton of sugar already. So lets summarize all of these:

  1. Rolled Oats
  2. Milk of choice
  3. Vegan Yogurt
  4. Chia Seeds / Flax Seeds / Hemp Seeds / Nut Butter
  5. Fruit
  6. Sweetener of choice

How long does it take for overnight oats to be ready?

A rule of thumb is to let them soak up all the liquid that you have added. I find that a minimum of four hours is good but overnight is best for sure. Remember to make at least four jars as these oats keep well for a whole week when refrigerated in an airtight container. Plus as an added bonus you will have breakfast ready for the week.

Can overnight oats be high in calories?

The short answer is yes, depending on the toppings and quantity of nut butters or sugar you are adding so if you are watching your weight like I am, chill out with the extra toppings. Lets begin shall we!

  • 1 Mason Jar
  • 1 Fork

Ingredients
  

  • 1/2 Cup Rolled Oats do not use quick oats
  • 2 Tablespoons Hemp Seeds or fat of choice
  • 2 Tablespoons Vegan Yogurt can be substituted with cream cheese or omit it
  • 1 Cup Soy Milk or milk of choice
  • 1 Teaspoon Vanilla Extract
  • 1 Pinch of Salt
  • 1 Tablespoon Condensed Milk optional
  • 1 Teaspoons Sweetener of Choice remember condensed milk is already sweet you may not even need this
  • 1 Teaspoon Freshly Squeezed Lemon or Lime Drops optional only use if not using yogurt or cream cheese
  • 1 Cup Strawberries save half for garnish

Instructions
 

  • Line up your ingredients for easy access. Remember to wash and chop the strawberries.
  • Pour the dry ingredients in the mason jars: oats, salt, hemp seeds, remember to start with just 1/4 teaspoon of sweetener because of the condensed milk.
  • Pour the strawberries, soy milk, condensed milk, yogurt, and vanilla and whisk with a fork to combine. Refrigerate for 4 to 8 hours.
  • When you are ready to serve add more strawberries as a topping and a little drizzle of condensed milk if desired.
  • Enjoy.

This recipe for Fresas con Crema overnight oats was designed to have a higher protein content for my nutritional goals. If this is not something you follow in your diet simply omit or replace the high protein ingredients like hemp seeds and soy milk.
Alternative meal ideas to serve with overnight oats? Personally, I just eat them as is but feel free to combine them with a tofu scramble and some toast in the morning if you desire.
