Vegan Un-Tuna

This vegan tuna will take you back to that sacked lunch your mom used to make you in elementary. I like to make mine a day before and eat it cold in a sandwich or wrap. On some occasions I even top it with a slice of vegan mozzarella cheese and put it in the toaster oven to have a DIY “Tuna Melt” for dinner.

Alternatively, if you are keeping a low carbohydrate approach in your eating lifestyle, you can top this on a bed of fresh vegetables and greens with a squeeze of lime. Feeling a little naughty then potato chips make a great side to this “Vegan Un-Tuna”.

Chickpea Alternatives

If you are not a chickpea fan and you do not mind a minimal processed ingredient you can also make this recipe with jack fruit. I would honestly go buy the canned jack fruit but if you are feeling bold and have extra time get some fresh jack fruit just remember it renders large quantities so you may have to freeze it or just eat jack fruit all week. The possibilities are really endless when it comes to eating jack fruit. It is so diverse and has recently had a glow up mimicking any type of animal protein. But the same goes for chickpeas, I have made chickpea scramble, omelettes, this awesome Chipotle Chickpea Salad and this Vegan Untuna salad as well.

So before we get started if you are using canned chickpeas do not throw away the juice it comes with, that is perfect for homemade granola or to make vegan mayonnaise. Make sure you rinse thoroughly the chickpeas as this will remove at least 75 percent of its sodium content. Grab a fork for smashing if you do not have a food processor and a large mixing bowl along with a kitchen towel in case of spills.

Equipment

  • Food Processor
  • Large Mixing Bowl
  • Potato Smasher or Fork if you do not have a food processor
  • Spatula

Ingredients
  

  • 1 Can Chickpeas 15 ounces
  • 1 Tablespoon Kelp Flakes or Nori Sheet that has been cut finely optional
  • 1 Tablespoon Dill Pickle Finely Diced
  • 2 Spears Celery Finely Diced
  • 3 Tablespoons Vegan Mayonnaise Optional

Instructions
 

  • Finely dice pickles and celery as small as possible as these will add flavor a bit of texture to your Vegan Tuna.
  • Place all of your ingredients except the mayonnaise in your food processor. If you are using kelp flakes you will notice a fishy odor. That is perfectly fine do not worry. Process your ingredients until you reach a tuna like consistency. With a spatula wipe the sides of the processor if ingredients have accumulated and process until you have reached your preferred consistency.
  • Place all of your processed including the mayonnaise in the large mixing bowl and gently fold together until all of the ingredients are covered in mayonnaise. Let your mixture chill in the fridge until you are ready to serve.
  • Enjoy your "Vegan Untuna" in a sandwich with olives or greens of choice.
