Vegan Watermelon and Cantaloupe Salad
Do you all get as excited as I do when it is watermelon season? I feel like watermelon has become the cauliflower of fruits. I mean you can make watermelon into smoothies, afternoon drinks, ice cream and even sorbet. But it doesn’t stop there because if you have been following a vegan lifestyle then you know we can turn watermelon into tuna when marinating it with nori sheets. We don’t play around when it comes to transforming an ingredient.
Vitamins and Minerals that Watermelon and Cantaloupe Offer
Let me address the elephant in the room. I don’t preach health on this website because transitioning alone may be difficult for many. However, I do preach good food. Whether it has oil or not is completely up to you. I use oil every so often but always try to offer an oil free version of the dishes I publish on this website. So If you are looking for health advice you will not find it on here. But if you are seeking good tasting food that resembles what you are used to eat it I may be able to help you. Which brings me to the vitamins and minerals that I didn’t even realize this salad offered. The lemon juice in this recipe offers not only zing and tangy notes but a good source of vitamin C. No I didn’t use the outer skin of the lemon but you can if you’d like. The blueberries have been shown to protect against heart disease and cancer. Either you love or hate cilantro but this herby Mexican favorite is thought to remove mercury, aluminum and lead in the body. But if you don’t like cilantro you can easily replace it with finely minced mint leaves. Have leftover cilantro from this recipe? Make this Mexican Street Tacos, wink wink. Cantaloupe contributes beta-carotene, selenium, lutein and choline. The star of the show “Watermelon” not only is low calorie, sweet and oh so refreshing but it also reduces blood pressure in addition to reducing LDL cholesterol. I mean if this doesn’t convince you of making this salad I don’t know what will. Let’s begin shall we!
Vegan Watermelon and Cantaloupe Salad
Equipment
- Cutting Board
- Large Bowl for Mixing
- Knife
Ingredients
- 1 Whole Individual Watermelon
- 1 Whole Cantaloupe
- 1 Tablespoon Minced Cilantro replace with Mint or Basil
- 2 Tablespoons Lemon or Lime Juice
- 1/4 Cup Minced Red Onion
- 2 Tablespoons Agave or Maple Syrup
- Salt and Chile Powder optional
- 10 Whole Blueberries optional
Instructions
- Cut the cantaloupe and watermelon in equal squares about 1×1 inch
- For garnish: Mince the red onion and cilantro. Cut several blueberries in half.
- Make the dressing with the agave and lemon juice
- Assemble your salad and mix all of the ingredients, garnish with the blueberries cut in half add the cilantro and red onion before you enjoy. Best when served cold.
