5-Minute Vegan Mexican Rice in the Instant Pot

  • Instant Pot
  • Kitchen Spoon

Ingredients
  

  • 1 Cup White Rice organic when possible
  • 1 Cup Tomato Sauce
  • 1/4 Cup Diced Onions
  • 1 Clove Garlic
  • 1 Tbs Neutral Oil
  • 1/2 Cup Water

Instructions
 

Saute Rice and Onion

  • Add oil or water to saute your onions and rice together for 3 to 4 minutes
  • Add 1 cup of tomato sauce and 1/2 cup water.
  • Set your instant pot to 5 minutes on manual. And follow pressure release instructions when the rice is ready. Fluff with a fork and serve as desired.
