Turn on the oven to 400F then squeeze 2 tablespoons of lemon or lime juice proceed to thinly slice the apple. Coat the apple slices with lemon juice and place in the refrigerator.
In a baking dish coat the brussel sprouts with 1 tablespoon of olive oil. Bake at 400F for 30 minutes flipping half way at the 15 minute mark.
Make the dressing by mixing the remaining olive oil, mustard, salt, pepper and maple syrup or sweetner of choice.
Once the the brussel sprouts are roasted add them to the apples and coat well with the dressing.
Serve as desired.
