Instructions
Add olive oil or vegetable broth to your instant pot on the saute setting. Saute the onion, garlic and bouillon cube for 3 to 4 minutes then add the 5 cups of water to release the flavors sticking to the bottom of the pot. Proceed to add lentils, carrots and diced tomatoes then stir to combine all ingredients. After this step set your pressure cooker on manual for 6 minutes. If using your stove bring all ingredients to a medium simmer and boil for 25 to 30 minutes until the lentils reach your desired consistency.
