1/8TeaspoonAlmond Extract or 1 Teaspoon Vanilla Extract
2Cups Vegan Butter room temperature
1CupLight Brown Sugar
1/4CupCoconut Sugar
2TablespoonsFlaxmeal flax eggs
6TablespoonsWarm Water for Flaxeggs
1TablespoonAgave Syrup
1/8TeaspoonSaltany will work
Instructions
Turn on your oven at 350F. Make the flax eggs by combining 2 tablespoons of flaxmeal with 6 tablespoons of warm water mix to combine and let sit for about 5 minutes. Chop the raw almonds.
In a large mixing bowl add the room temperature vegan butter, sugars, salt, agave, almond or vanilla extract and whisk to combine with a hand mixer. Add the flax eggs and the chopped almonds. Lastly add the flour and mix to combine.
Line a baking sheet with parchment paper and add cookie dough balls the size of a quarter. Place the cookies in the oven to bake at 350F for 10-15 minutes depending on your oven. Cookies tend to expand so be careful not to place them too close to eachother.
