Place the carrot in 2 cups of hot water to cook until soft. You may want to cut it in pieces to speed up the process. You will boil for approximately 10 minutes.
Once the carrot is soft and cooked through, place the carrot with 1/2 of a cup of the boiling water in a blender along with all of the other ingredients and blend until you reach your desired consistency. Serve warm.
I served mine with blue chips to add color to this photo. But the next day ate it in a wrap for lunch.
